tomato and asparagus salad

Serves 2

Ingredients

500g green or/and white asparagus
8-12 cherry tomatoes
1 small onion
3 tsp olive oil (3 pts)
4-5 tsp balsamic vinegar
oregano, salt and pepper to taste

Instructions

First, cut off the coarse woody ends of the asparagus stalks and peel away any blemishes. Cut the asparagus into pieces of about 5cm. Put the crowns to one side, drop the rest of the pieces into a pan of boiling salted water. Wait five minutes, then add the crowns. Cook for a further five to ten minutes or until the asparagus is tender.

Meanwhile, peel and chop the onion and cut the cherry tomatoes in halves or quarters (depending on their size). Put them in a salad bowl.

For the vinaigrette, whisk together the balsamic vinegar and olive oil in a small bowl and season to taste. (If you like basil you might want to add a few finely chopped leaves...)

Add the drained asparagus pieces to the tomatoes and onion and mix with the vinaigrette.

recipes for success

Welcome to my brandnew blog! For those of you who don't know me yet, let me introduce myself. I'm just an ordinary fat girl, on my quest to lose those extra kilos I've been carrying around for too long.

This place will be all about food. I love food and I love to eat! 'No wonder she got that fat' you might think now, but let me assure you that the recipes I will be posting here are going to be point friendly and actually HELP me to lose the lard.
